#Foodspiration: 3 colorful meals to copy from Instagram

Looking for a little healthy lifestyle inspiration? Sometimes, a picture’s worth a thousand words. We round up three of the best meals we’ve seen on Instagram this week.

Winter (and spring, and summer, and autumn) salad


Rocket, beetroot and sweet potato make this salad ideal for winter, but feel free to adapt based on what’s available in your local area. When it comes to ingredients that are in season all year round, nutritionist Raphaël Gruman recommends carrots, which are rich in betacarotene (responsible for their bright orange color). Once digested, this pigment is transformed into Vitamin A - essential for collagen production.[1] Hydration is essential for healthy-looking skin, so Raphaël recommends adding fruits and or vegetables that have a high water content, such as watermelons and celery, to your diet.

Storecupboard savior: chunky stuffed sweet potato


Packed full of slow-release carbohydrates, this delicious recipe works just as well for an evening meal as it does for lunch at work - all thanks to the humble sweet potato! Just like carrots (see above), sweet potatoes owe their bright orange flesh to betacarotene. What’s more, this vitamin’s impressive antioxidant potential is maximised when eaten alongside soluble fats - making this recipe a great way to incorporate coconut oil into your diet. For extra points, cook your tomato sauce from scratch. Not only do store-bought sauces tend to be high in sugar, fresh tomatoes are rich in antioxidant lycopene - proven to help lessen the effects of sunburn, as well as being a powerful anti-inflammatory.

Fancy fruit platter


Perfect for a girls’ night in, this delicious fruit platter looks as impressive as it tastes (as long as your knife skills are up to scratch, that is!) If you’re looking for glowing, wide-awake skin, Raphaël recommends mango for - yep, you guessed it - its high levels of betacarotene. Meanwhile, grapes are rich in polyphenol antioxidants, which help fight against exposome damage linked to pollution, UV rays and smoke. Finally, though often overlooked, you might be surprised to learn that pound for pound, kiwi fruit actually contain more Vitamin C - key for collagen synthesis - than oranges. Turns out you really are what you eat!
